How to make Shredded Taco Chicken in the PRESSURE COOKER

 Shredded Taco Chicken in the Pressure Cooker


This is by far my favorite way to make chicken for taco night. It is super simple and quick to do. 

You are going to start out with 3-4 boneless skinless chicken breasts.
I like to trim off any fat from the chicken before cooking. You will also need a packet of taco seasoning. You could also make some homemade taco seasoning if you don't have a packet on had. I also add some salt, pepper, and garlic powder to taste for extra flavor. The last ingredient is 2 cups of salsa.
I have an amazing salsa recipe that I use if you need one! 
Next you add a little bit of your salsa to the bottom of the pressure cooker and top with your chicken and seasonings.

Then you want to cover everything in the remaining salsa. You do not need to add any more liquid to your pot unless your salsa is super thick. I find that the salsa has enough moisture and works just fine coming up to pressure and cooking. Set your pressure cooker valve to SEAL and cook on HIGH PRESSURE for 10 minutes. 
It will take a few minutes for your pressure cooker to build up pressure before the timer starts counting down. Once your chicken cooks for 10 minutes you are going to let the pressure NATURALLY RELEASE for 10 minutes. This just means you let it sit for 10 minutes and then you can switch the valve to VENT and release any remaining pressure. 

At this point you can open your lid and shred the chicken. I find that the fastest and easiest way to shred chicken is with my stand mixer. Yes, it creates more dishes but it is totally worth it in my opinion! It takes maybe 60 seconds to shred chicken this way! 
Add the chicken back into the pot with the liquid that the chicken cooked in and you are ready to serve.

This makes the chicken so flavorful and moist (sorry I had to say it). 


Shredded Taco Chicken in the Pressure Cooker


Ingredients:

3-4 Boneless Skinless Chicken Breasts

2 Cups Salsa

1 Packet Taco Seasoning

Salt, Pepper, & Garlic Powder to taste


Directions:

1. Add 1/2 cup of salsa to the bottom of your pressure cooker.

2. Add your chicken breasts.

3. Sprinkle chicken with taco seasoning, salt, pepper, and garlic powder.

4. Top with remaining 1 1/2 cups of salsa and put the lid on your pressure cooker. 

5. Set the valve to SEAL. Cook on HIGH PRESSURE for 10 minutes. NATURALLY RELEASE the pressure for 10 minutes and then VENT.

6. Shred chicken and add back in the pot with the cooking liquid. 

7. Serve with your favorite taco toppings and side dishes.
